RHUBARB CUSTARD PIE 
Unbaked pie shell
3 c. diced unpeeled rhubarb

Cover with the following and let stand 15 minutes. 2 c. sugar 3 tbsp. flour 1/2 tsp. salt 1/2 tsp. nutmeg 1/4 stick butter

Pour into shell. Bake at 400 degrees for 30 minutes. Reduce heat to 350 degrees and finish baking for 30 minutes.
