FRESH APPLE CAKE 
1 1/2 c. all-purpose flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 c. corn oil butter, softened
1 c. granulated sugar
2 eggs
4 c. finely chopped and pared apples
2 c. 40% bran flakes

Stir together flour, soda, salt, cinnamon and nutmeg. Beat the 1/2 cup butter and granulated sugar. Beat in eggs, stir in apples, cereal and flour. Bake in a small bundt pan at 350 degrees for 45 minutes, or until pick comes out clean.

FROSTING:

3 oz. cream cheese
1 tbsp. butter
1 tsp. vanilla
1 1/2 c. confectioners' sugar

Beat cream cheese, butter and vanilla. Gradually add confectioners' sugar, beating until smooth. If frosting is too thick, add 1 to 2 teaspoons milk. Spread on cooled cake.

Note: This is a high fiber cake - freezes well.
