CORNBREAD SKILLET CASSEROLE 
2 eggs, slightly beaten
1 1/2 cup cornmeal
1 can cream style corn
1 cup milk
1/4 cup vegetable oil
1 lb. ground beef
2 cups mild cheddar cheese, grated
1 cup chopped onion
1/4 cup jalapeno pepper (or however much you want)

Combine first 5 ingredients; set aside. Brown ground beef; drain and set aside. Pour half of first ingredients into pan. Sprinkle evenly with beef. Top with cheese, onion, and pepper. Pour remaining batter over top.

Bake at 350°F for 45 - 50 minutes.

NOTE: If you want to, you can substitute the cup of milk with a cup of sour cream.
