PILGRIM'S MICROWAVE PUMPKIN
BREAD
 
Ground cinnamon for dusting dish
1 1/2 c. sugar
1 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. ground cloves
1/2 c. vegetable oil
1/3 c. water
2 eggs, slightly beaten
1 c. canned pumpkin
1/2 c. chopped walnuts
1/2 c. chopped pitted dates (optional)

Butter a plastic or ceramic 10 cup ring mold or bundt dish. Sprinkle slightly with cinnamon, set aside. In a large bowl combine sugar, flour, salt, baking soda, cinnamon, nutmeg and cloves. Beat in oil, water, eggs and pumpkin by hand, mix until thoroughly blended.

Fold in dates and nuts by hand and pour into prepared ring mold or bundt dish. Rotating dish twice during baking, bake or cook medium setting of microwave 13 to 15 minutes. Cool in mold 10 minutes. Turn out onto rack. Makes one loaf. Delicious.

Since microwave ovens vary in power, you may need to adjust your cooking time.
