PEAS-RIFIC (TERRIFIC WITH PEAS) 
3 c. cooked black eyed peas in blender, measure out 2 c. for recipe, puree
2 c. flour
1/2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. allspice
3 eggs
2 c. sugar
3/4 c. vegetable oil
1 sm. (4 oz.) jar carrots, baby food
1/2 c. crushed pineapple, drained
1/2 c. cherries, chopped
1/2 c. chopped nuts

Combine flour, soda, baking powder, salt and spices. Beat eggs. Add sugar and oil; beat until smooth. Stir in pureed peas and remaining ingredients. Pour into 2 round cake pans. Bake at 350 degrees for 35 to 40 minutes.
