PEANUT BRITTLE
2 c. granulated sugar
1 c. firmly packed light brown sugar
1/2 c. light corn syrup
1/2 c. water
Pinch of salt
1/4 c. butter
1/8 tsp. baking soda
1 1/2 c. peanuts

Combine sugar, corn syrup and water in saucepan. Cook, stirring, until sugars are dissolved. Cook, without stirring, until a little mixture dropped in cold water, forms a very brittle particle (330 degrees). Remove from heat, add salt, butter and soda. Stir just to mix. Add nuts and turn into shallow well-greased pan. Let stand for a minute and then pull quite thin. When cold, break in pieces. (1 1/2 pounds)
