PECAN DELIGHT PIE 
20 Ritz crackers (crumbled up)
1/2 c. sugar
1 c. pecans
3 egg whites
1/2 c. sugar
1 tsp. vanilla
1 c. whipping cream

Beat egg whites and add 1/2 sugar. Fold in crushed cracker crumbs. Add remaining ingredients. Pour into pie pan and bake 30 minutes in 350 degree oven. Serve with whipped cream on top.
