STUFFED MUSHROOMS 
2 lb. mushrooms
2 tsp. olive oil
1 c. chopped onions
1 c. Italian-flavored bread crumbs
1 c. grated cheese
1 egg

Remove stems from mushrooms and chop very fine. In skillet, add 2 tablespoons olive oil and saute chopped onions and stems. Then add the bread crumbs and grated cheese. While stirring, beat the egg and then add to mixture. Remove from heat. Now fill each mushroom cap with filling. Place on greased pan and bake in 375 degree oven until brown, about 15 minutes.
