FIESTA BANANA CAKE 
2 c. cake flour
1 tsp. Calumet baking powder
1 tsp. baking soda
1/2 c. shortening
3/4 tsp. salt
1/2 c. sour milk or buttermilk
1 c. mashed bananas
2 eggs, unbeaten
1 tsp. vanilla
1/2 c. nuts
1 3/4 c. sugar
Whipped cream

Measure flour, baking powder, salt, soda and sugar together. Place shortening in bowl, stir to soften. Sift in dry ingredients. Add 1/4 cup milk and mashed bananas. Mix until flour is dampened. Beat 2 minutes with mixer or 300 vigorous strokes by hand. At 300 strokes add eggs, vanilla, nuts and remaining milk. Beat 1 minute more.

Bake at 350 degrees for 35-40 minutes in 2 (8 inch) pans. Spoon whip cream between layers and top with banana icing. Garnish with banana slices.

BANANA ICING:

Mix: 2 tsp. vanilla 1 c. 10X sugar

Add alternately: 2 c. 10X sugar
