BANANA NUT CAKE | |
1 c. shortening 3 c. sugar 4 eggs 1 c. buttermilk 2 tsp. baking soda 1 tsp. baking power 1 tsp. vanilla 1/4 tsp. salt 4 c. flour 5 to 6 bananas, mashed 2 c. nuts, chopped Cream shortening and sugar, add eggs one at a time, beating well after each addition. Dissolve soda in buttermilk. Sift flour and baking powder. Add flour, buttermilk and bananas alternately to egg mixture. Add nuts. Bake in 3 greased and floured pans 325 degrees for 25 to 30 minutes. ICING: 1 sm. can crushed pineapple with juice 2 eggs 1 c. sugar 1 c. coconut 1 stick butter Cook until thick. Add 1/2 cup chopped pecans. Spread between layers. CREAM CHEESE FROSTING: 1 (8 oz.) cream cheese 1 stick butter 1 box powdered sugar 1 tsp. vanilla Cream together and spread on top and sides of cake. |
