BANANA NUT CAKE 
2 1/4 c. cake flour
1 2/3 c. sugar
1 1/4 tsp. baking powder
1 1/4 tsp. baking soda
1 tsp. salt
2/3 c. shortening
2/3 c. buttermilk
3 eggs (1/2 to 3/4 c.)
1 1/4 c. mashed ripe bananas
2/3 c. finely chopped nuts

Heat oven to 350 degrees. Grease and flour baking pan, 9 x 13 or two 9 inch, or three 8 inch round layer pans. Measure all ingredients into large mixer bowl. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes high speed, scraping bowl occasionally. Pour into pans. Bake 9 x 13 40-50 minutes, layers 35-40 minutes or until wooden toothpick inserted in center comes out clean. Cool. Ice with your favorite Cream Cheese Icing.
