2 1/2 c. flour 1 tbsp. flour 1 tsp. salt (optional) 1 c. lard 1 egg, separated Milk Sift together flour, sugar and salt. Cut lard in with pastry blender, until like coarse meal. Beat egg yolk in measuring cup and add milk to make 1/2 cup. Add to lard mixture. Mix just enough so dough shapes into ball. Roll out half to 15x11 pan. Spread evenly with filling. Roll out rest of dough for top crust, place over filling, seal edges. Beat egg white until stiff, spread on top crust. Bake 40 minutes at 400 degrees. FILLING: 5 apples, sliced thin 2/3 c. sugar 1 tbsp. flour 1/4 tsp. nutmeg 1/4 tsp. cinnamon Mix 1 cup of 4X sugar and 2 tablespoons lemon juice. Dribble over top crust while hot from oven. |
