CARAMEL CORN 
8 c. popcorn, popped
3/4 c. brown sugar
6 tbsp. butter
3 tbsp. light corn syrup
1/4 tsp. vanilla
1/4 tsp. salt
1/4 tsp. baking soda
Optional: nuts of your choice

Place popcorn into large baking pan. Mix together sugar, butter, corn syrup, and salt in saucepan. Heat and stir over medium heat until mixture begins to boil. Cook for 5 minutes without stirring.

Remove from heat; stir in vanilla and baking soda. Pour over popcorn and mix until well coated. Place in 300 degree oven for 5 minutes or until popcorn is separated. (Optional: Add nuts to popcorn before coated with syrup mixture.)
