NICOLE'S COCOA GRAHAM PANCAKES 
These pancakes are delicious and nutritious. The graham flour provides great texture while the cocoa adds rich flavor. These are not sweet. Add the banana for sweetness and your kids will gobble them up!

1 cup graham flour
2 tsp. baking powder
2 tbsp. cocoa powder
4 tsp. cane sugar
1 egg, beaten
1 cup milk (I use almond milk so any kind will do)
3 tbsp. vegetable oil
1 tsp. vanilla extract
1 banana, mashed (optional)

Mix all dry ingredients in a medium bowl. Beat egg. Whisk in milk, oil and vanilla. Stir in banana, if desired. Pour wet ingredients into dry and mix till combined. Ladle onto griddle sprayed with cooking spray, flip when edges are done.

Makes 8 to 10.
