CHICKEN ENCHILADA CASSEROLE 
1 chicken, boiled & boned
1 lb. grated sharp cheddar cheese
1 lg. onion, chopped
1 bag Doritos
1 can Ro-tel tomatoes, chopped
1 can cream of chicken soup
1 can cream of mushroom soup
1 can chicken broth

In a 13 x 9 inch pan, arrange 1/2 bag of Doritos evenly. Chop chicken and combine with cheese and onion. Put this mixture in pan over chips. Add remaining chips over top.

Combine and blend the 3 cans of soup in a large bowl. Add tomatoes to soup mixture then pour over on top of chips. Bake uncovered at 350 degrees for 45 minutes. May be frozen after cooling.
