APPLE - NUT CAKE 
3 eggs
1 3/4 c. sugar
1 c. oil
2 c. unsifted flour
4 to 6 cooking apples (diced)
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
1 c. chopped nuts

Blend eggs, sugar and oil. Sift flour, soda, salt and cinnamon together. Stir in egg mixture. Fold in apples and nuts. Bake in 9 X 13 greased and floured pan, at 350 degrees for one hour. Cool. Cut in squares and sprinkle with powdered sugar.
