Combine:

1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
2 c. sugar
1 1/2 tsp. salt
3/4 c. oil
2 eggs

Mix until well blended.

Add alternately:

3 c. flour
1 c. chopped nuts
4 c. chopped fresh apples

Bake at 350 degrees for 1 hour.
