FRESH APPLE NUT CAKE 
2 eggs
1 c. cooking oil
1 3/4 c. sugar
2 1/2 c. self rising flour, sifted
1 c. nuts, chopped
3 c. apples, pared and chopped
1 tsp. cinnamon
1 tsp. vanilla extract

Heat oven to 300 degrees. Grease a 13 x 9 x 2 baking pan. Beat together eggs, oil and sugar. Add remaining ingredients and mix well. Turn batter into prepared pan and bake 1 hour and 10 minutes. Let cake cool in pan. Frost with Cream Cheese Icing and cut into squares to serve.

ICING:

2 (3 oz.) pkg. cream cheese
1/2 stick butter
1 box confectioners' sugar
2 tsp. vanilla extract

Combine all ingredients and beat to blend. Spread on cake.
