HUNGARIAN GOULASH | |
1/2 c. flour 1/2 tsp. salt 1/2 tsp. pepper Pinch of Hungarian paprika 2 1/2 lb. steak, cut in cubes 3 tbsp. oil 2 tbsp. butter 6 lg. onions, chopped 1 clove garlic, crushed 2 c. beef broth, divided 3 tbsp. tomato paste 1 tbsp. Hungarian paprika Grated rind of 1 lemon 1/2 tsp. marjoram 1/4 tsp. caraway seeds Hot buttered noodles Combine first 4 ingredients. Dredge meat in flour mixture, saute in oil and butter until browned; drain well, reserving drippings. Saute onion in reserved drippings until tender; drain well. Combine onion, 1/2 cup beef broth, tomato paste, 1 tablespoon paprika, lemon rind, spices and garlic in a large Dutch oven, simmer 3 minutes. Stir in meat and remaining broth, cover and simmer 1 1/2 hours or until meat is tender. Serve over noodles. Serves 10. |
