PEANUT LOGS 
1 c. chunky peanut butter
1 (1 lb.) box confectioners sugar
2 sticks butter
3 1/2 oz. coconut
1 c. unsalted nuts, chopped

Mix together the above. Chill overnight. When well chilled, roll a very small amount to make a log about 1 1/2 inch long.

ICING:

In a double boiler, put 1 1/2 cups semi-chocolate chips, 3/4 block Paraffin; heat together on low. Stir once in a while, stick a toothpick into log, then into the melted chocolate. With another toothpick, push the log onto wax paper. There will be a small hole where the toothpick was stuck, so you should cover the hole with a small amount of chocolate using a small spoon. Freezes well.
