CHOCOLATE CHIP OATMEAL MUFFINS 
1/2 c. butter
3/4 c. packed brown sugar
1 egg
1 c. flour
1 tsp. baking powder
1/4 tsp. baking soda
3/4 c. applesauce
1 c. rolled oats
1 c. chocolate chips

In large bowl cream butter and sugar. Beat in egg. Combine dry ingredients, add alternately with applesauce to creamed mixture. Stir in oats and chips.

Fill paper lined muffin tins 3/4 full. Bake at 350 degrees for 25 minutes. Yields 12 large muffins.
