MUSHROOM SOUP | |
1/2 stick real butter 1 chopped onion 2 tbsp. flour 3-4 cans chicken broth 1 lb.+ sliced fresh mushrooms Salt Pepper 1 c.+ previously cooked rice Melt butter in heavy pot. Saute onion in butter until brown. Stir in flour. Stir continuously to make a rough type mixture - when good and brown - do not burn - add chicken broth, use 3-4 cans depending on how much soup you want. Add salt and pepper to taste. Bring to a boil. Add sliced mushrooms if you like lots of mushrooms. Add more than one pound. Lower to simmer and cover. Cook about 30 minutes. When ready to serve put rice in each bowl and pour soup over. You can serve soup with or without rice. |
