LEMON - BUTTER STARS 
4 sticks butter, softened
2 1/2 c. sugar
4 eggs
2 lemon rinds, grated
1 pinch salt
7 c. flour
4 egg yolks
Pinch of sugar

Beat butter and sugar until foamy. Add eggs, one at a time, lemon and salt. Add flour and knead swiftly. Roll out dough to 1/4 inch thickness. Cut out with star cookie cutters. Place cookies on buttered cookie sheets. Let rest in cool place a few hours. Before baking, brush cookies twice with lightly beaten egg yolk. Bake at 350 degrees about 20 minutes until golden. Will keep 3-4 weeks in air-tight cookie can in cool place.
