CANDY GUMDROPS 
1 (1 3/4 oz.) pkg. powdered fruit pectin
3/4 c. water
1/2 tsp. baking soda
1 c. sugar
1 c. light corn syrup
2 tsp. strawberry extract
Red food coloring
Sugar for coating

Combine fruit pectin, water and baking soda in medium saucepan. (This mixture will foam.)

Combine sugar and corn syrup in a large saucepan. Place both pans on stove over high heat. Cook, stirring alternately until foam disappears from fruit pectin mixture and sugar mixture boils rapidly, about 8 minutes. Pour pectin mixture into boiling sugar mixture in a thin stream, until all pectin mixture is added. Then, stirring constantly, boil 1 minute longer. Remove from heat.

Stir in strawberry extract and a drop of red food coloring. Immediately pour mixture into 8x8x2 inch pan. Let stand at room temperature for 3 hours; do not refrigerate, or until candy is cool and firm. Cut gum drops into cubes with knife that is dipped in warm water. Roll in sugar.
