EASY BREAD PUDDING 
6 c. day-or-so old bread, cubed or broken into pieces
1 c. raisins (or other dried fruit or chopped apple as desired)
1 1/2 c. skim milk
1 c. egg substitute
1/3 to 1/2 c. sugar
2 tsp. vanilla
Cinnamon and or nutmeg as desired

Beat together egg substitute, sugar, vanilla, and spices. Pour over bread and fruit in 8 inch pan or casserole. Bake at 350 (325 degrees if glass dish is used) for 20-30 minutes or until set. May be (if desired) baked in a pan of water for an hour or so. Serve with milk or clear lemon or other sauce.
