FINNISH COFFEE CAKES | |
1 c. shortening or butter 1 c. sugar 2 tbsp. salt 1 qt. scalded milk 2 cakes yeast or 2 pkg. dry yeast 12 c. flour 3 eggs 12 cardamon seeds, roll with rolling pin 2 tbsp. corn syrup Sugar Add shortening to sugar, salt and hot milk. Cool to lukewarm; add yeast and beat with electric beater until dissolved. Add 6 cups flour; beat well. Mix in eggs, ground cardamon and remaining flour. Knead until dough does not stick to fingers. Let rise 1 hour or until doubled in bulk. Divide in 3 portions. Cut each portion into 3 pieces; roll each piece into ropes and braid. Place on greased cookie sheet. Let rise 30 minutes. Bake at 350 degrees for 30 minutes. Combine syrup and hot water. Brush tops of cakes; sprinkle with sugar. Makes 3 cakes. (Dough can be made into cinnamon rolls.) |
