OPEN FACE RAISIN PIE 
1 c. raisins
1/3 c. water
2 tbsp. butter
3 eggs
3/4 c. sugar
1 tbsp. flour
1 tsp. vanilla or black walnut flavoring
1/4 tsp. salt
1/2 c. black walnuts
1 unbaked pie shell

Heat raisins with water for about 3 minutes or until plumped. Add butter and let stand. Divide the egg yolks from whites, putting whites in large enough bowl to beat.

Beat yolks with the sugar; add flour, salt, and flavoring. Stir in the raisins (if raisins have not absorbed the water, drain off all but 1/4 cup). Stir in nuts. Beat egg whites until stiff, fold into above mixture. Pour into unbaked pie shell. Bake at 375 degrees for approximately 35 minutes.
