STUFFED MUSHROOMS 
8 lg. fresh mushrooms
1 tbsp. butter
1 sm. onion, finely chopped
1 clove garlic, minced
2 oz. summer sausage or pepperoni, finely chopped
6 crackers, crushed
3 tbsp. grated Parmesan cheese
1 tbsp. minced parsley
1/4 tsp. lemon pepper seasoning
1/8 tsp. Italian seasoning

Power: High. Microwave Time: 6 to 7 minutes. Wipe mushrooms with a damp paper towel to clean. Remove stems, chop stems finely. Combine butter, chopped mushroom, stems, onion, garlic and chopped meat in a 2 cup glass measure. Microwave at High 3 minutes. Add cracker crumbs, cheese, parsley, and seasonings. Mix well. Fill mushroom caps with mixture. Arrange in a circle on a 9 inch glass pie plate. Cover with waxed paper. Microwave at High 3 to 4 minutes or until heated through. Yield: 8 large mushrooms.

Since microwave ovens vary in power, you may need to adjust your cooking time.
