MIKE'S CAESAR SALAD 
1 head romaine lettuce
1 to 2 slices dry bread
1 or 2 tbsp. butter
3 or 4 cloves garlic
2 to 3 tbsp. olive oil
1 tbsp. lemon juice (or half squeezed lemon)
2 tsp. red wine vinegar
2 tsp. dry mustard powder
3 or 4 drops Tabasco sauce
3 or 4 drops Worcestershire sauce
1 egg yolk
2 to 3 anchovy fillets

Finely chop garlic.

Cut bread into 1-inch squares, fry in butter and 1/2 the garlic. Sprinkle with a few herbs to taste.

In a large wooden bowl (preferred) mash the anchovy fillets, add olive oil and remainder of the garlic. Set aside. Wash lettuce and spin or set out to dry.

Add egg yolk and beat mixture thoroughly. Continue to add and mix remainder of ingredients.

Add lettuce and toss. Add croutons and serve. Sprinkle with Parmesan and fresh black pepper to taste.

Note: You may add cubed cheese (your choice of kind), bacon bits, tomato, chicken breast, shrimp. The list can go on. I am sure you can find your own option. Perhaps additional oil will be needed with some options like the shrimp or chicken may require.
