BLACK BOTTOM PIE | |
1 9" baked pie shell 1 1/4 tbsp. cornstarch 1/2 c. sugar 4 egg yolks, beaten 2 c. scalded milk 1 c. semi-sweet chocolate morsels 1 tsp. vanilla 1 env. unflavored gelatin 1/4 c. cold water 4 egg whites 1/2 c. sugar 1/4 tsp. cream of tartar Combine cornstarch, sugar and egg yolks in top of double boiler. Add milk and cook until custard coats metal spoon. Into 1 cup custard, beat 3/4 cup chocolate morsels and 1/2 teaspoon vanilla. Pour into pie shell. Combine gelatin, water and 1/2 teaspoon vanilla; let stand 5 minutes. Add to remaining custard and cool. Beat egg whites, 1/2 cup sugar and cream of tartar until stiff but not dry. Fold into white custard mixture and pour over chocolate layer in pie shell. Garnish with remaining morsels which have been chopped. |
