CHEESE CORNBREAD 
1 c. yellow cornmeal
1 c. all-purpose flour
1 tbsp. baking powder
1 tsp. salt
2 c. mild yellow cheese (cheddar, colby or brick)
1 c. milk
1 egg, beaten
1/4 c. butter, melted

Combine cornmeal, flour, baking powder and salt. Grate cheese and add half of it to dry ingredients. Combine milk, egg and butter and stir into cornmeal mixture without beating. Pour batter into greased cake pan or 8" iron skillet. Sprinkle rest of cheese on top, bake at 425 degrees for 20 minutes.
