CHEESE N' BEEF UPSIDE-DOWN
CORNBREAD
 
1 1/2 lbs. ground beef
1 tbsp. flour
1 (6 oz.) can tomato paste
1/2 tsp. chili powder
1 c. (4 oz.) cubed cheddar cheese
2 sm. boxes of Jiffy corn muffin mix

Preheat oven to 400 degrees. In a large skillet, cook beef until lightly browned; drain. Stir in flour, add tomato paste and chili powder. Remove from heat; add cheese. Spread evenly over bottom of 9 x 9 x 2 inch square baking pan. Prepare muffin mix according to directions on the boxes; spread over beef mixture. Bake 55 minutes. Let stand 5 minutes, loosen around edges and invert onto serving platter. 8 servings.
