SZECHWAN CHICKEN AND CASHEWS 
2 whole chicken breasts, approx. 2 lb., boned & skinned
2 tsp. cornstarch
1/4 tsp. ground ginger or 1/2 fresh ginger (to taste)
2 tbsp. water
2 tbsp. dry sherry or white wine
1/4 c. soy sauce
1 tbsp. sugar
1 tbsp. white vinegar
2 cloves garlic, minced
5 sm. dried hot red chili peppers
3 tbsp. salad oil
1/2 c. dry roasted cashews
1 lg. green pepper, seeded, cut into 3/4" squares
