BRAZIL NUT CASSEROLE 
WHITE SAUCE:

2 c. soy milk
1 tbsp. cornstarch or 2 tbsp. whole wheat flour
1 tbsp. oil
1 tsp. salt
1 tbsp. onion powder
1/4 tsp. garlic powder
1 1/2 tsp. dried parsley
2/3 c. sliced black olives
2/3 c. sliced or chopped Brazil nuts (may use food processor)
3 c. cooked whole wheat or soy flat noodles

Blend first 6 ingredients briefly on high. Pour into medium saucepan and add dried parsley. Repeat recipe 1 more time. Cook white sauce on medium-high, stirring constantly until thickened. Line bottom of Lecithin-oiled 8x8 inch baking dish with 1/2 cup white sauce. Then layer with the following:

1 1/2 c. cooked noodles
1/3 c. sliced olives
1/3 c. sliced Brazil nuts
1 1/2 c. white sauce

Repeat procedure ending with 1 1/2 cup white sauce. Bake at 350 degrees for 35-45 minutes. Yield: 8x8 inch baking dish.
