1 c. all-purpose flour 2/3 c. cornmeal 1 tsp. sugar 1 1/2 tsp. baking powder 1 tsp. salt 2 tbsp. melted bacon drippings 1/2 tsp. baking soda 1 egg, beaten 1 - 1 1/4 c. buttermilk 1 lb. frankfurters Vegetable oil Prepared mustard, catsup, picante sauce (optional) Mix flour, cornmeal, sugar, baking powder and salt together in a bowl. Mix together egg, buttermilk and soda then mix into flour mixture and mix well. Cut frankfurters into 10 pieces. Dip frankfurter sections into batter, covering completely. Drop into about 3 or 4 inches deep hot oil (375 degrees). Cook until golden brown, turning one time. Drain on paper towels. Serve with mustard, catsup or picante sauce. |
