STRAWBERRY SHORTCAKE 
(Mark was hungry for strawberry shortcake one late evening, so he baked this recipe. We were all in bed when I heard the timer go off--the aroma filled the house as he enjoyed dessert!)

2 c. sifted flour
3 tsp. baking powder
2 tbsp. sugar
1/2 tsp. salt
1/2 c. butter
1 beaten egg
2/3 c. light cream
6 c. sugared, sliced strawberries
1 c. whipping cream, whipped (with 2 tablespoons sugar, 1/2 teaspoon vanilla added)

Sift dry ingredients and cut in butter like for pie crust. Combine egg and light cream; add to crumb mixture stirring only to moisten; spread dough in greased 8 inch round or square pan, slightly building dough up around edges. Bake 350 degrees for 15 to 18 minutes or until golden brown; serve warm. Slice in half and add strawberries, then again on top; add a dollop of whipped cream.
