APPLE PRUNE PUDDING 
3 sq. or 4 round matzos
3 lg. apples, peeled and cored
1/3 c. finely chopped prunes
1/2 c. seedless raisins
1/2 tsp. ground cinnamon
Rind of 1/4 lemon, sliced thin
3/4 c. sugar
1/4 c. melted butter
3 eggs, beaten light and thick

Soak the matzos in cool water until thoroughly moistened, then squeeze dry.

Cut apples into small thick pieces. Place apples, prunes, raisins, cinnamon, lemon peel, sugar and melted butter in a bowl with the crushed matzo pulp and finally stir in the eggs.

Spoon the mixture into a greased 1 quart casserole and bake in a moderate, 350 degree, oven for 50 minutes or until well browned. Serves 5 or 6. Enjoy!!!
