PEPPERED CROUTONS 
8 (3 inch thick) slices French bread
6 tbsp. (about) safflower oil
2 tsp. (about) coarsely ground pepper

Lightly brush both sides of bread with some oil. Sprinkle generously on both sides with pepper. Heat 2 tablespoons oil in heavy large skillet over medium heat. Add bread and cook until golden brown on the first side, about 1 1/2 minutes. Add 2 more tablespoons oil to the skillet. Turn bread over and cook until second side is golden brown, about 1 1/2 minutes. Drain croutons well on paper towels.
