BANANA BREAD 
2 eggs
1/2 c. vegetable oil
1 c. sugar
3 c. ripe bananas
1/2 tsp. vanilla
2 1/2 c. flour (half whole wheat)
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/2 c. nuts, optional
1 c. sugar

Beat eggs slightly. Add oil and sugar; beat well. Add bananas and vanilla. Sift together dry ingredients; add to liquid ingredients. Stir until flour disappears. Stir in nuts. Bake at 350 degrees for 40 minutes. Makes 3 small loaves 3 1/2 x 7 1/2 inches or 2 loaves 4 1/2 x 8 1/2 inches. Larger loaves will take a little longer to bake. (I developed this recipe a few years ago, trying to come up with a "healthier variety".
