POPPY SEED ORANGE MUFFINS 
1 1/3 c. flour
1/2 c. sugar
1/2 c. non-fat plain yogurt
3 tbsp. polyunsaturated unsalted butter
2 egg whites
1 tbsp. poppy seed
1/2 tsp. baking soda
4 tbsp. orange juice concentrate (unsweetened)

Preheat oven to 400 degrees. In 1 1/2 quart mixing bowl beat all ingredients at low speed until moistened (about 1 minute). Spoon batter into muffin tin lined with wax paper liners or greased with polyunsaturated cooking spray. Bake for 17-22 minutes or until lightly browned. Makes 12 muffins.
