MIX - IN - THE - PAN CHOCOLATE
SNACK CAKE
 
1 2/3 c. all purpose flour
1 c. packed brown sugar
1/4 c. cocoa
1 tsp. baking soda
1/2 tsp. salt
1 c. water
1/3 c. vegetable oil
1 tsp. vinegar
1/2 tsp. vanilla
Confectioners' sugar (optional)

Preheat oven to 350 degrees.

In an 8 x 8 x 2 inch ungreased baking pan, mix flour, brown sugar, cocoa, baking soda, and salt with a fork. Mix in remaining ingredients.

Bake 35-40 minutes, or until wooden toothpick inserted in center comes out clean. If desired, dust with Confectioners' sugar. Cut into squares and wrap and pack for lunch.

Makes 8-10 servings.
