OAT BRAN MUFFINS 
2 1/4 c. oat bran cereal
1/2 tsp. baking soda
3 egg whites
2 tbsp. safflower oil
2 env. Equal
3/4 c. skim milk
1 c. fresh blueberries (opt.)
1/2 c. chopped walnuts

Preheat oven to 350 degrees. In a medium bowl, combine oat bran, baking soda and nuts. Combine egg whites, oil, Equal and milk and pour into cereal mixture. Gently fold in blueberries. Spoon mixture into muffin pan (use liners) and bake at 350 degrees for 25 minutes. Makes 12 muffins.
