APPLE MUFFINS 
2/3 c. flour
2/3 c. dark brown sugar, packed
1 tbsp. baking powder
1/2 tsp. nutmeg

Mix together above ingredients in a large bowl.

In a medium bowl, combine with whisk:

1/4 c. Egg Beaters (or one egg)
1/3 c. safflower oil
2/3 c. apple juice

In medium bowl, toss together:

1 tart apple, unpeeled & diced 91 c.)
1 tsp. cinnamon
1/2 c. raisins
1/2 c. chopped nuts

Pour egg mixture over dry ingredients and fold lightly, 3 or 4 times with rubber spatula. Add apple mixture and distribute evenly using a few strokes. Divide batter evenly into 12 well-greased muffin cups. Bake in preheated 400 degree oven 23 to 25 minutes.
