CANDIED SWEET POTATOES 
6 med. sweet potatoes, baked until soft, then peeled
2 tbsp. sugar
1 (8 oz.) can crushed pineapple, drained
1/4 tsp. cinnamon
1/2 tsp. vanilla extract
4 tbsp. melted butter

Or 2 (24 oz.) cans whole sweet potatoes.

Preheat oven to 375 degrees. Cut each potato into 4 pieces lengthwise. Place in a greased shallow baking dish. Sprinkle sugar, pineapple and cinnamon over the potatoes. Add vanilla to butter and pour over all. Bake for 30 minutes or until lightly browned.
