2 boxes confectioners sugar
1 sm. potato
1 tsp. vanilla
1 med. jar peanut butter
2 tsp. butter, melted

Cook and mash potato. Sift sugar in large bowl; add vanilla and butter, blending well. Add mashed potato a little at a time, working until you have a soft dry dough. Roll out as for a jelly roll, spread with peanut butter, and roll up in long roll. Slice 1/2 inch thick, place between layers of wax paper and chill.
