PORK TENDERLOIN PARMIGIANA 
1 lb. pork tenderloin
1 egg
1/2 tsp. seasoned salt
1/8 tsp. pepper
1/2 to 1 c. bread crumbs
2 tbsp. oil
1 jar spaghetti sauce
1/4 c. (more) Parmesan cheese
2 slices (more) Mozzarella cheese

Beat egg; add salt and pepper. Dig whole tenderloin in egg, then crumbs. Brown on both sides in oil. Place in shallow baking dish. Pour spaghetti sauce over meat. Sprinkle with Parmesan. Bake, covered, at 350 degrees for 30 to 40 minutes. Remove, cover, and place Mozzarella on top. Bake 10 minutes or until cheese melts or meat reaches 170 degrees internal temperature.
