MEAT LOAF ROLL 
2 lb. lean hamburger meat
1/2 bell pepper, finely chopped
1/2 onion, chopped
1 pkg. onion soup mix
2 eggs
1/2 c. cracker crumbs
1 1/2 c. mashed potatoes
2 c. Cheddar cheese
1 1/2 cans tomato sauce

To prepare the meat mixture, saute the hamburger meat, bell pepper, onion, onion soup mix and the eggs. Then take the 1/2 cup of cracker crumbs and spread flat on waxed paper. Pat out meat flat on top of the cracker crumbs. Next, spread mashed potatoes on top and in the middle of the meat. Sprinkle with 1 1/2 cups of the cheese. Begin rolling the mixture into a jelly roll shape. Close the ends and bake for 45 minutes. Sprinkle with 1 cup of cheese and bake for 15 minutes more. Allow to cool for 15 minutes, then slice.
