PASTA WITH HOT TOMATO AND BACON 
1/2 lb. bacon
2 lg. onions, chopped
2 c. stewed tomatoes
1 c. chopped fresh tomato
1 tbsp. tarragon
3 cloves minced garlic
2 tsp. sugar
1/2 tsp. red pepper flakes

Fry the bacon and set aside. Saute the 2 large onions in the bacon fat for about 5 minutes. Stir in the minced garlic, stewed tomatoes, fresh tomatoes, tarragon, sugar and red pepper flakes. Simmer for 30 minutes. Add crumbled bacon. Serve with pasta and sprinkle with Parmesan. Serves 6.
