WALNUT POTATO ROAST 
1 1/2 c. raw potatoes grated or thin sliced
3/4 c. onion, grated
3/4 c. hot tomato juice
2 tbsp. butter
3/4 c. chopped walnuts
1 c. bread crumbs
1 tsp. sage
1 tsp. salt
2 eggs

Place in oiled pan and steam for 2 hours in warm oven or you may bake at 400 degrees for 20 minutes or until potatoes are tender. You may serve with brown gravy.
