MOCK APPLE PIE 
4 c. flour
1 3/4 c. sugar
1 1/2 c. butter
2/3 c. lemon juice
1 c. raisins
Dash of salt
8 c. zucchini (seeded, skinned & cut like apple slices)
3/4 c. sugar
1/2 tsp. nutmeg
1 tsp. cinnamon

Mix flour, sugar, salt and butter until crumbly for crust. Simmer zucchini and lemon juice until tender. Add sugar and spices; cook a little longer. Add raisins and 1/2 cup crust mix. Stir until thick.

While zucchini is simmering, put half the crust in 9 x 13 inch pan. Bake for 5 minutes at 300 degrees. Remove from oven and evenly spread zucchini mixture over crust. Sprinkle remaining crust mix over filling. Sprinkle cinnamon on top. Bake for 30 minutes at 375 degrees. Serve with ice cream or whipped topping.
